The countryside dreams
The fertile valley of the Chili River that encloses Arequipa resembles a mantle that protects the city made
of sillar; but it is also the pantry from where the corn, potatoes, chili Peppers and garlic that constitute
the indelible seal of Arequipa´s cuisine are all kept. Its terraces, fruit orchards, its flowers and herds have
served as inspiration for painters and poets, ever since colonial times.
Among its fields we find numerous attractions such as the old Sabandía Windmill built in 1621; the
Paucarpata terraces built in pre-Hispanic times; the famous Mansion of the Founder located in Huasacache,
which belonged to don Garcí Manuel de Carvajal, and where it is possible to find a beautiful temple made
of sillar; or the Yura, Jesus and Socosani thermal Waters, formed as a result of the great volcanic activity
of the subsoil. Yet, it is probable that one of the best qualities of this countryside are the great views of the
Misti looming eternally over the city and the valley, as a constant reminder that Arequipa has been built
under the sign of the volcano.
